In case you didn't know, "adobo" is actually a method of cooking using soy sauce and vinegar. Braised in a rich savory gravy, the chicken is so tender that it melts in your mouth. Although there are many variations, they all have pork, garlic and vinegar. Aside from chicken and pork Adobo, there are also other kinds like shrimp and fish.

Adobong Baboy

Ingredients

  • 1 1/2 lbs. pork belly cubed
  • 3/4 cup pineapple juice
  • 8 cloves garlic crushed
  • 3 tablespoons soy sauce
  • 5 tablespoons white vinegar
  • 4 teaspoons fish sauce
  • 3 pieces dried bay leaves
  • ½ teaspoon peppercorn cracked
  • 2 tablespoons cooking oil

Instructions

  1. Combine pork and pineapple juice. Mix well. Marinate pork for a minimum of 3 hours.
  2. Separate the pork from the remaining marinade. Set aside.
  3. Heat oil in a pan. Add garlic. Sauté until the garlic starts browning.
  4. Add pork. Sauté until the outer part starts to turn light brown.
  5. Pour soy sauce and add dried bay leaves and cracked peppercorn. Stir. Continue cooking for 2 minutes.
  6. Pour vinegar and remaining pineapple juice marinade. Let boil. Stir. Cover the pan and adjust heat to low. Continue cooking until the pork tenderizes.
  7. Remove the cover of the pan. Add fish sauce. Stir and continue cooking in medium heat until the sauce completely evaporates.
  8. Transfer to a serving bowl. Serve with warm rice.

2. Sinigang na Baboy

Another dish that is commonly served in every Filipino meal is Sinigang na baboy. It is a famous tamarind-based soup made up of pork slices and vegetable cuts such as kangkong leaves, okra, eggplant, tomato and string beans. It is one of the Filipino comfort foods with its sour and savory flavor.

Ingredients

Sinigang na Baboy
  • 2 lbs pork belly or buto-buto
  • 1 bunch spinach or kang-kong
  • 3 tablespoons fish sauce
  • 12 pieces  string beans sitaw, cut in 2 inch length
  • 2 pieces tomato quartered
  • 3 pieces chili or banana pepper
  • 1 tablespoons cooking oil
  • 2 quarts water
  • 1 piece onion sliced
  • 2 pieces taro gabi, quartered
  • 1 pack sinigang mix good for 2 liters water

Instructions

  1. Heat the pot and put-in the cooking oil
  2. Sauté the onion until its layers separate from each other
  3. Add the pork belly and cook until outer part turns light brown
  4. Put-in the fish sauce and mix with the ingredients
  5. Pour the water and bring to a boil
  6. Add the taro and tomatoes then simmer for 40 minutes or until pork is tender
  7. Put-in the sinigang mix and chili
  8. Add the string beans (and other vegetables if there are any) and simmer for 5 to 8 minutes
  9. Put-in the spinach, turn off the heat, and cover the pot. Let the spinach cook using the remaining heat in the pot.
  10. Serve hot. Share and enjoy!

3. Tinolang Manok

Another soup-based recipe popular in the Philippines is this healthy and flavorful chicken dish known as Tinola. It is made up of chicken cuts and papaya cooked through sautéing garlic, onion and ginger. Its rich broth and soothing flavor is even perfect during rainy days. .

Ingredients

  • 1 whole chicken cut into serving pieces
  • 36 ounces rice washing
  • 1/2 piece green papaya cut into wedges
  • 1 tablespoon garlic minced
  • 1 piece onion chopped
  • 1 thumb ginger cut into strips
  • 2 tablespoon fish sauce
  • 1 cup Hot pepper leaves
  • 3 tablespoons fish sauce
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté the garlic, onion, and ginger
  2. Put-in the chicken and cook until color turns light brown
  3. Add the fish sauce. Stir. Pour rice washing into the cooking pot. Let boil. Cover the pot and simmer for 45 minutes. Note: add water if needed.
  4. Add green papaya. Cook for 5 minutes
  5. Add the hot pepper leaves or malunggay leaves. Stir and cook for 1 minute.
  6. Season with ground black pepper. Note you can also add fish sauce or salt if needed.
  7. Transfer to a serving bowl. Serve hot. Share and enjoy!
